Bean, Avocado and Papaya Burritos
These burritos offer a wonderful blend of spicy and sweet, hot and cold, crisp and smooth flavors.
Bean, Avocado and Papaya Burritos
4-5 slices Soy Bacon  Â
1/2Â Onion(s)Â Â Â chopped
2 cloves Garlic   chopped
1 tsp. Chili Powder
1 tsp. Cilantro (chopped)Â
   Salt & Pepper to taste
1 can Black Beans   drained, then soaked in Beer
1/3 cup Beer  Â
4 Whole Wheat Tortillas  Â
1/2 cup Cheddar Cheese   shredded
1 Avocados   sliced
1 Papaya   sliced
 Salsa  Â
 Lettuce  Â
Cook soy bacon as per package directions & set aside.
Sauté Onion & Garlic in a little olive oil until lightly browned.
Add Beans & Beer and seasonings.Â
Heat, then coarsely mash beans.
Warm tortillas, and fill each tortilla with bean mixture, lettuce, shredded cheese, salsa, avocado and papaya.
Sprinkle crumbled soy bacon over the top
Roll into burritos.
